Chia Shake With Saffron, Vanilla Cream And Lime Zest
Ingredients
Chia shake with saffron
3 cups coconut milk or almond milk
The possible sweetening of 2 Medjool dates (or a pinch of high-quality stevia)
1 tsp vanilla powder
2,5 tablespoons of chia seeds/ Basil seeds
4-5 frozen very ripe bananas
1 packet of saffron
Coconut Cream
400 grams (or more) coconut cream
½ teaspoon vanilla powder
1 pinch of high-quality stevia (or other sweetening)
Instructions
Mix the coconut/almond milk with dates and vanilla powder in a blender. Mix the milk with the chia seeds/Basil seeds in a bowl and let stand for at least 30 minutes. Stir occasionally.Meanwhile, whip the thick layer of coconut milk into cream. Add a pinch of stevia. Let stand in the refrigerator.When the chia seeds have swollen, mix bananas and saffron in a blender or a food processor to an ice cream consistency. Add the chia mixture and mix slowly until everything has been mixed.Pour chia shake in a glass and serve with the coconut cream. Decorate with pistachios and lime zest.
